Breakfast...the most important meal of the day!

You've heard it as much as I have... Breakfast is the most important meal of the day!  I really do love breakfast food but I love laying in my bed in the mornings more so I needed to figure something out that could be fast and easy but much better than fast food.  So... I started making up breakfast burritos and freezing them.  Surprisingly, I'm not tired of them yet and I've been doing this for several weeks.  They are just too easy to make.


Breakfast Burritos:

3 eggs
1/2 c cheddar cheese
6 slices cooked bacon (or sausage, diced ham etc.. or all)
2/3 cup shredded hash brown potatoes
1/4 c milk
salt/pepper to taste (I like to add Creole seasoning)
Small flour tortillas

(These measurements  for the milk, potatoes, and cheese are approximate because I just usually put in what looks good - it's how my grandmother taught me! LOL)

Preheat oven to 325 degrees.Mix milk with eggs and beat with a fork.  Tear bacon into small pieces and add to eggs.  Add cheese and potatoes.  Mix well and add seasonings.  Spray a 9 inch pie plate with cooking spray. Pour egg mixture into pie plate.  Bake for about 15-20 minutes or until eggs are set well. 
When cooked scoop a couple of spoonfuls of egg mixture into flour tortilla and fold.  Repeat.  This usually make 10-12 burritos (depending on how heavy handed I get).  Wrap each burrito in foil and store in a gallon sized baggie in the freezer.  In the mornings, I remove the foil and put the burrito on a paper towel and heat for about 1 minute 5 seconds!  PERFECTION!
